1 cup chopped chocolate ( I combined bittersweet , and two other types of unsweetened chocolate )
1 1/2 cups half-and-half
1 cup heavy cream
4 egg yolks
1 whole egg
1/2 cup butter , softened
1 1/4 cups powdered sugar
1 teaspoon mexican vanilla

Instructions

1.Heat half-and-half and heavy cream over medium heat in a saucepan until steaming.
2.Meanwhile, in a mixing bowl with an electric mixer, beat together egg yolks and egg until pale and thick.
3.Gradually whisk hot cream mixture into eggs, whisking constantly until smooth.
4.Pour mixture back into saucepan and cook over low heat, whisking constantly until mixture thickens enough to coat the back of a spoon.
5.Remove from heat and add in chopped chocolate, whisking until melted.
6.Add in softened butter, powdered sugar, and Mexican vanilla, whisk until the mixture is completely smooth.
7.Pour through a fine mesh strainer to remove any lumps.
8.Divide the mixture evenly among six 6-ounce ramekins.
9.Cover with plastic wrap directly on the surface of the mixture in each ramekin.
10.Chill in the refrigerator until firm, at least 2 hours, or up to 3 days.
11.Serve chilled, garnished with fresh berries and a dollop of whipped cream, if desired.
