1/2 cup fine dry breadcrumb
1 teaspoon dried sage
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
2 garlic cloves , minced
1 lb lean ground beef
1 lb ground lean pork

Instructions

1.Preheat oven to 375 degrees. Spray a 9x5 inch loaf pan with cooking spray.
2.Rinse chicken livers and pat dry. In a food processor or blender, puree chicken livers until smooth.
3.In a large mixing bowl, combine chicken liver puree, ground beef, ground pork, minced garlic, chopped shallots, dried sage, port wine, beaten egg, dried cranberries, half and half, chopped pistachios, salt, pepper, and breadcrumbs.
4.Mix all ingredients thoroughly and spoon mixture into loaf pan. Press mixture down firmly and cover with aluminum foil.
5.Place loaf pan in a larger baking dish with hot water added halfway up the sides. Bake at 375 degrees for 1 hour and 30 minutes.
6.Remove from oven and let cool for 15 minutes. Refrigerate overnight before serving.
