Ingredients

6 large egg yolks
1 large whole egg
2/3 cup granulated sugar
1 3/4 cups heavy cream
1 3/4 cups milk
1 1/2 tablespoons instant espresso powder
2 tablespoons Kahlua
1/4 cup firmly packed light brown sugar or 1/4 cup raw sugar

Instructions

1.Preheat the oven to 325°F.
2.In a bowl, whisk together egg yolks and whole egg until smooth.
3.In a pan, heat granulated sugar over medium flame, stirring constantly for 6-8 minutes until it melts and turns amber in color.
4.Remove the pan from heat and gradually pour in cream and milk while whisking continuously.
5.Add instant espresso powder and Kahlua and mix well.
6.Gradually add the egg mixture to the cream mixture, whisking constantly.
7.Divide the mixture among 6 ramekins and place them in a large baking dish.
8.Pour hot water into the baking dish to reach halfway up the sides of the ramekins.
9.Bake for 40-45 minutes, until the custard is set but still jiggles slightly in the center.
10.Remove the ramekins from the baking dish using tongs or a spatula, let it cool and refrigerate for at least 3 hours.
11.Sprinkle brown sugar on top of each ramekin and use a butane torch to caramelize the sugar.
