Ingredients

90 g unsalted butter
1/4 cup caster sugar
1 egg yolk
3/4 cup ground almonds
1 tablespoon rum
1 sheet ready rolled puff pastry ( butter puff pastry )
1 lightly beaten egg
2 tablespoons white sugar
Pithivier is a traditional French pastry that dates back to the 17th century. It is usually served as a dessert or snack, with a buttery and flaky crust and a sweet almond filling. The name Pithivier comes from the town of Pithiviers, where the pastry was first created. Instructions

1.In a mixing bowl, cream together butter and caster sugar until fluffy.
2.Add egg yolk and mix well.
3.Stir in ground almonds and rum and mix until well combined.
4.Preheat oven to 200°C and place a baking sheet on a baking tray.
5.Roll puff pastry on a floured surface to 3mm thickness and cut out a 20cm circle.
6.Spread the almond mixture onto the center leaving 2cm of pastry at the edge.
7.Brush the edge with beaten egg, then fold the pastry over the filling to form a half-circle.
8.Press edges together to seal, then crimp with a fork.
9.Brush with beaten egg and sprinkle with white sugar.
10.Cut a small steam vent in the center and place on the baking sheet.
11.Bake for 25-30 minutes until golden brown and crisp.
12.Let cool for 10 minutes before serving.
