Ingredients

2 lbs cannellini beans
28 ounces roast duck ( Maple Leaf farms Brand , Use the duck sauce for something else )
4 ounces bacon , sliced into pieces
4 pork sausage links
4 ounces tomato paste
1 tablespoon olive oil or 1 tablespoon rendered duck fat
1 large onion , diced
1 carrot , diced
1 celery rib , sliced
1 jalapeno , minced ( optional )
1 bulb of garlic , sliced
2 tablespoons chopped fresh parsley
1 tablespoon fresh thyme leave
2 bay leaves
1 teaspoon salt
1 teaspoon pepper
28 ounces diced tomatoes
2 -4 tablespoons butter
2 cups breadcrumbs

Instructions

1.Rinse and soak the cannellini beans overnight in a large pot filled with water. Drain and rinse in cold water.
2.In a large oven-proof pot or Dutch oven, brown the bacon and remove from the pot. Keep the rendered fat in the pot,
3.Fry the sausage in the bacon fat until browned on all sides, then set them aside with the bacon.
4.Add the onion, carrot, celery, jalapeno, and garlic to the pot and sauté until the onion turns translucent, about three minutes.
5.Add tomato paste and stir until the mixture is well combined.
6.Add diced tomatoes, thyme, parsley, salt, and pepper. Bring to a simmer.
7.Add the duck meat to the pot once everything is heated. Then cover everything with a few inches of water.
8.Bring everything to a boil, then reduce the heat to low and cover the pot. Simmer the beans for 3 to 4 hours, or until they are cooked and tender.
9.Preheat the oven to 350 degrees Fahrenheit. Take out the thyme stems and bay leaves, and season the cassoulet with salt and pepper to taste. It should be thick. If it is too thin, raise the heat for a few moments to reduce it slightly.
10.Melt butter in a frying pan, add fresh breadcrumbs and stir until toasted golden.List carefully the items in a bowl before service breaking the bread over the top.
