Ingredients

8 teaspoons caster sugar
60 g unsalted butter
8 teaspoons honey , use honey at room temperature
2 eggs
extra 1/4 cup caster sugar
1 teaspoon vanilla extract
2/3 cup plain flour
1 teaspoon baking powder
1 finely grated orange , rind of
icing sugar , also known as confectioners sugar and powdered sugar ( for dusting )
Madeleines’ originated in France and are one of the most beloved pastries in the world. They are small buttery cakes shaped like seashells. This recipe adds a twist to the classic recipe by adding honey and orange, giving an amazing combination of flavors. Madeleines are perfect for an intimate get-together or for enjoying it with a cup of tea. It makes for a tasty dessert or a mid-day snack. These Madeleines’ are also an excellent go-to recipe when craving something sweet and light.

Instructions

1.Preheat your oven to 200°C/gas mark 6/ 400°F.
2.Melt butter in a small pan and add honey and 8 teaspoons of Caster sugar, mix it well.
3.Use a hand whisk or an electric whisk, whisk the eggs with the extra 1/4 cup caster sugar and vanilla extract until pale and doubled in volume.
4.Sift plain flour and baking powder and add it to egg mixture, fold in gently until well combined.
5.Add grated orange rind to butter honey mixture and then add the mixture into the egg mixture, fold in gently until mixed well.
6.Rest a buttered Madeleine tray for a minimum of 10 minutes in a freezer.
7.Pour 1 tablespoon of mixture into each mould, leaving the middle one empty as this will help the Madeleines’ to rise.).
8.Place the tray in the oven and bake for 8-10 minutes or until the Madeleines’ are rising and golden brown on the edges.
9.When ready, gently tip the Madeleines’ tray to remove them.
10.Sift some icing sugar over your Madeleines’ to create an extra layer of sweetness.
