Ingredients

1/3 cup golden raisin
1/3 cup capers ( with 1 Tbsp . of their liquid reserved )
6 tablespoons unsalted butter
1/4 cup water , plus
1 tablespoon water
1 tablespoon sherry wine vinegar
3/4 teaspoon salt
freshly grated nutmeg
fresh ground pepper
1 tablespoon olive oil
4 large cauliflower florets , sliced into 1-inch thick pieces
2 large sea scallops , each sliced horizontally into 3 discs
10 sprigs flat leaf parsley , rolled , cut into thin strips
This dish is a perfect combination of sweet, savory, and healthy. The scallops are perfectly seared and the cauliflower is caramelized to create an excellent base that holds all the flavors together. Instructions

1.Soak raisins in a bowl of hot water for 30 minutes.
2.Over medium-high heat, melt 2 tablespoons butter in a small saucepan.
3.Add capers and 1 tablespoon reserved liquid and cook until liquid evaporates, about 1 minute.
4.Add drained raisins, 1/4 cup water, vinegar, and 1/4 teaspoon salt, nutmeg, and pepper. Cook until raisins are soft and liquid is mostly evaporated.
5.Puree raisin mixture in a blender until smooth. Add remaining butter and blend until emulsified.
6.Heat olive oil in a nonstick skillet over medium-high heat. Add cauliflower and sprinkle with remaining 1/2 teaspoon salt.
7.Cook until browned and tender, stirring occasionally, for about 10 minutes.
8.Season scallops with salt and pepper, then add to the same skillet. Cook until golden brown on the outside and just opaque in the center, about 2 minutes per side.
9.Serve the scallops on a bed of cauliflower and spoon caper-raisin emulsion over the top. Garnish with parsley.
