Ingredients

1 quantity basic pizza dough or 1 puff pastry
1 kg onion
6 large garlic cloves
100 ml olive oil
water
salt
caster sugar
15 salted anchovy fillets , rinsed
15 black olives , stoned
Pissaldiere, also known as Caramelized Onion Tart from Provence, is a traditional French dish that originated from Nice. The name is derived from the word 'pissalat', which means 'salted fish'. The tart is made with sweet caramelized onions, salty anchovies, and stoned black olives, all placed on top of a crisp pizza dough or puff pastry. This dish is often served as an appetizer or a light meal and is great both hot and cold. Its sweet and savory taste makes it a crowd-pleaser for any social gathering.

Instructions

1.Preheat oven to 200°C/180 fan/gas mark 6.
2.Roll out the pizza dough or pastry on a floured surface and transfer it to a baking tray. Prick it with a fork and leave it to rest for 15 minutes.
3.Cut the onions in half lengthways and then into thin slices. Crush the garlic and set it aside.
4.Heat the olive oil in a large frying pan over medium-high heat. Add the onions and garlic and fry until they soften.
5.Add a pinch of salt and a sprinkle of caster sugar to the onions and cook for 10 more minutes. Add water if needed.
6.Spread the onions over the pastry evenly. Top with the anchovy fillets and black olives.
7.Bake for around 25-30 minutes until the pastry is golden brown.
