Ingredients

1 small limes or 1 small lemon , finely chopped , pips removed
1 small onion , finely chopped
2 -3 garlic cloves , crushed
100 g butter , softened
1 roasting chickens
4 sprigs lovage or 4 stalks celery & leaves , roughly chopped
1 tablespoon lavender flowers
50 ml olive oil
2 tablespoons lavender honey
salt & freshly ground black pepper
lavender , and lovage sprigs ( to garnish )
This Lavender, Lovage and Lime Roast Chicken with Honey recipe is a fragrant twist on a classic roast chicken dinner. Instructions

1.Preheat the oven to 180°C. Mix together the finely grated zest of the lime or lemon, onion, garlic and butter. Set aside.
2.Rinse and pat dry the chicken. Carefully lift the skin and rub half the butter mixture over the flesh of the chicken, making sure you reach the legs and thighs as well as the breasts.
3.Mix together the rest of the butter mixture with the celery or chopped lovage, lavender flowers, olive oil and lavender honey. Use a cooking brush to brush the chicken all over with the honey mixture.
4.Place the chicken on a baking tray and season with salt and freshly ground pepper. Roast the chicken in the middle of the oven for 1 hour and 20 minutes
5.Once the chicken is cooked through, let it rest for 10-15 minutes before carving. Garnish with lavender and lovage sprigs.
