Ingredients

4 sweet onions ( like Vidalias , about 3 pounds )
3 tablespoons butter
1 teaspoon salt
2 cups white wine
3 cups beef broth
3 cups chicken broth
bouquet garni , thyme sprigs , bay leaf and parsley tied together with kitchen string
1/2 teaspoon garlic powder
4 -6 slices crusty French bread , 1 slice per serving
kosher salt
ground black pepper
1/2 cup emmenthaler cheese , grated coarsely
1/2 cup gruyere cheese , grated coarsely
French onion soup is a classic soup that originated in France, but is now enjoyed all over the world. It is a savory soup made with caramelized onions, beef broth, chicken broth, and white wine, seasoned with garlic powder, bay leaf, parsley, and thyme. A slice of bread is added to the soup and topped with cheese, then broiled until melted and bubbly. Instructions

1.Cut the onions into thin slices.
2.Melt the butter in a large pot over medium heat and add the onions and salt. Cook the onions, stirring frequently until caramelized, for about 90 minutes.
3.Add the white wine and raise the heat to high, stirring frequently. Cook until most of the wine has evaporated.
4.Add the beef and chicken broth, garlic powder, and bouquet garni and simmer for 30 minutes.
5.Preheat the oven to 450°F. Toast the slices of French bread in the oven until golden brown.
6.Discard the bouquet garni and season the soup with salt and pepper.
7.Ladle the soup into oven-safe bowls and place a slice of toasted bread on top. Divide the grated cheese between the bowls and broil in the oven until the cheese is golden brown.
