Ingredients

2 medium shallots or 2 green onions , finely chopped
2 tablespoons red wine vinegar
1 hard-cooked egg
1 tablespoon Dijon mustard ( Grey Poupon style )
salt , to taste
1 1/4 cups vegetable oil ( neutral flavored )
1 tablespoon capers , rinsed dried coarsely chopped ( optional )
1 tablespoon pickle relish
1/4 cup loosely packed fresh herb ( choice of chives , tarragon , parsley and dill )

Instructions

1.In a small bowl, whisk together the chopped shallots or green onions and red wine vinegar. Let it sit for 10 minutes.

3.Gradually whisk in the vegetable oil, a few drops at a time, while constantly whisking the egg mixture until it thickens.
4.Once all the oil is incorporated, fold in the prepared shallot mixture, capers (if using), pickle relish, and fresh herbs. Mix well until everything is combined.
5.Season with additional salt and vinegar to taste.
