Ingredients

2 steaks , NY Strip , bone in suggested ( do n't skimp on quality )
kosher salt
2 teaspoons black peppercorns , coarsely crushed
3 tablespoons butter ( clarified & unsalted )
2 shallots , minced
3/4 cup beef stock ( I use Better Than boullion ) or 3/4 cup broth ( I use Better Than boullion )
1/4 cup brandy or 1/4 cup cognac
3/4 cup heavy cream
1 tablespoon green peppercorn , in brine , drained and slightly crushed
Steak Au Poivre Verte is a French dish that translates to 'steak with green pepper'. It is traditionally made with a flavor-packed crust of coarsely crushed black peppercorns and cooked with a creamy, peppercorn sauce. This Ultimate Decadent Version takes the recipe up a notch with the addition of green peppercorns and brandy or cognac in the sauce. The bone-in NY Strip steaks are used to bring out the steak's flavors, but other cuts of beef can be used instead. The perfect steak for a dinner party, this recipe will not disappoint.

Instructions

1.Trim the steak, pat dry, and season with kosher salt.
2.Crush the peppercorns coarsely with the help of a mallet or rolling pin.
3.Press coarsely crushed peppercorns over the steaks to coat their surfaces with an excess of pepper.
4.Heat a skillet over medium-high flame. When hot, add clarified butter to it.
5.Once the butter has started bubbling, add seasoned steaks. Cook both sides for around 3 minutes to achieve a nice crust.
6.Transfer the cooked steaks to a warm plate and keep them covered.
7.In the same skillet, add minced shallots and beef stock or broth. Deglaze and scrape the skillet's bottom gently by using a wooden spoon.
8.Add brandy or cognac, if using, and continue to cook for 2-3 minutes to slightly reduce the sauce.
9.Pour heavy cream and stir in slightly crushed green peppercorns. Continue cooking for around 2 minutes or until the sauce has slightly thickened.
10.Return steaks to the pan and cook for an additional 2 minutes on each side.
11.Once the sauce has reached the thickness of your liking, take off the heat. Serve the steaks with the sauce poured on top.

PROS

This steak recipe is the perfect combination of flavors and textures for any dinner party.
The crust on the steak is incredibly tasty and the sauce has a lovely richness to it, all the while being incredibly easy to make.

CONS

Steak Au Poivre Verte is quite a decadent dish.
The high amount of butter and cream makes it quite calorie and fat-dense.
