3 field roast Italian sausages
1 teaspoon olive oil
2 medium onions , halved and sliced thin lengthwise ( about 1 1/2 cups )
2 garlic cloves , chopped fine
1 1/2 teaspoons mixed chopped fresh herbs , such as rosemary , thyme , sage
1 bay leaf
1/2 cup chopped scallion top ( or fresh parsley )
14 1/2 ounces diced tomatoes including juice
19 ounces white beans , drained and rinsed ( cannellini , navy , Great Northern )
1 tablespoon olive oil
2 slices firm white bread , crusts discarded , cut into 1/4 inch dice
1 small garlic clove , chopped fine
2 tablespoons finely chopped fresh parsley leaves ( wash and dry before chopping )

Instructions

1.Preheat the oven to 350 degrees F (175 degrees C).
2.In a large skillet, heat olive oil over medium-high heat, add sausage and cook until browned, about 5 minutes. Remove from skillet and set aside.
3.Add onions and garlic to the skillet and cook until onions become translucent, about 5 minutes. Stir in herbs, bay leaf, scallions, tomatoes, and beans. Cook for an additional 5 minutes until heated through.
4.In a separate bowl, stir together olive oil, bread cubes, garlic and parsley. Scatter the bread mixture over the top of the bean mixture and bake for 15 to 20 minutes, until golden brown and crispy on top.
