Ingredients

1/4 cup unsalted butter
1 cup all-purpose flour
1 large pinch cayenne pepper
1 large pinch kosher salt
1 cup gruyere cheese , grated ( plus 3 tbsp . )
1/2 cup asiago cheese , grated
2 teaspoons fresh thyme leaves ( plus more for garnish )
5 large eggs
Thyme Gougeres originated in France and are a classic example of a savory choux pastry. They can be served as an appetizer or snack and are often accompanied by a glass of wine or champagne. The addition of thyme gives Thyme Gougeres a unique and fresh flavor that pairs well with savory ingredients like meats and cheeses or sweet ingredients like honey and fruit. Thyme Gougeres are easy to make and are a hit with any crowd.

Instructions

1.Preheat the oven to 425°F / 220°C.
2.In a medium saucepan, combine the butter, cayenne pepper, and kosher salt with 1 cup of water. Bring the mixture to a simmer over medium heat until the butter is melted.
3.Remove the saucepan from the heat and add the flour all at once, stirring vigorously with a wooden spoon until smooth and the dough comes together in a ball.
4.Add in the grated Gruyere and Asiago cheeses, thyme, and 4 of the eggs one at a time, stirring well after each addition until the dough is smooth and glossy.
5.Place the dough in a piping bag with a 1/2 inch round tip. Pipe the dough onto a non-stick baking sheet in small mounds about 2 inches apart.
6.In a small bowl, whisk together the remaining egg with 1 tablespoon of water to make an egg wash. Brush the egg wash over the top of each gougere and sprinkle with the remaining Gruyere cheese.
7.Bake for about 20-25 minutes until golden brown and puffed. Garnish with fresh thyme leaves and serve warm or at room temperature.
