4 small avocados , peeled and mashed
3 roma tomatoes , chopped
1 large shallot , minced
1 jalapeno pepper , minced
1/2 lemon , juiced
1 cup low sodium chicken broth
1/4 cup corn oil
1 red bell pepper , cut into thin strips
1 yellow bell pepper , cut into thin strips
1 package button mushrooms , sliced thin
1 teaspoon coriander seed , crushed
1 teaspoon celery seed
1/4 teaspoon freshly cracked black pepper
2 tablespoons water
3 tablespoons corn oil
3 large shallots , sliced
4 garlic cloves , smashed
3 1/2 cups water
2 tablespoons white wine vinegar
1/4 cup cold unsalted butter , cut into 1/2-inch cubes
1/2 teaspoon sea salt
2 tablespoons olive oil
4 beef tenderloin fillets , room temperature
1 package corn chips
The filet mignon is a luxurious cut of beef that is perfect for a special-occasion meal or a decadent treat. The cut is taken from the tenderloin and is known for its tenderness and flavor. Instructions

1.Mash together avocados, roma tomatoes, minced shallot, jalapeno pepper, and lemon juice in a bowl for guacamole. Cover and refrigerate until assembly time.
2.Heat chicken broth in a saucepan until boiling. Simmer until reduced by half, about 10 minutes.
3.Combine corn oil, bell peppers, sliced mushrooms, coriander seed, celery seed, and black pepper in a large bowl. Toss until combined.
4.Heat a skillet and add water, corn oil, sliced shallots, and smashed garlic cloves. Cook until the shallots begin to soften, stirring occasionally.
5.Add the pepper and mushroom mixture to the skillet and cook for 10 minutes, stirring occasionally until vegetables are softened
6.Preheat the broiler. Season both sides of each steak with salt and black pepper. Cook the steaks to desired degree of doneness under the broiler, about 5 minutes per side for medium-rare.
7.Divide the pepper and mushroom mixture amongst 4 plates. Top each with a steak and drizzle with reduced chicken broth and cold cubed butter.
8.Garnish the plate with guacamole and corn chips as desired.
