1 can diced tomatoes , undrained
4 large eggs , lightly beaten
1 tablespoon chopped fresh parsley , optional

Instructions

1.In a large nonstick skillet, heat the olive oil over medium heat.
2.Add chopped red and green bell peppers and saute for about 5 minutes, or until the peppers begin to soften.
3.Add minced garlic, dried thyme, salt, and ground red pepper, and cook for another 2 minutes.
4.Pour the canned diced tomatoes, undrained, into the skillet, and reduce heat to low.
5.Cook for 10-12 minutes or until the liquid has slightly reduced.
6.Pour beaten eggs over the tomato mixture and cook, stirring occasionally, until eggs are set but still moist, for about 6-8 minutes.
7.Top with chopped fresh parsley, if desired.
