Ingredients

1 tablespoon olive oil
8 lamb , forequarter chops trimmed of fat
2 brown onions , chopped
400 g cannellini beans , drained ( I used 4 bean mix )
8 garlic cloves , peeled
3 sprigs rosemary
2 tablespoons tomato paste
3/4 cup white wine
400 g peeled tomatoes

Instructions

1.Preheat oven to 180C
2.Heat a large ovenproof casserole dish over medium heat. Add oil and lamb. Cook, turning, for 5 minutes or until browned. Remove and set aside.
3.Add onions, beans, garlic, rosemary and tomato paste to dish. Cook, stirring, for 5 minutes or until onions have softened. Add white wine and tomatoes.
4.Return lamb to dish. Bring to the boil. Cover and transfer to oven. Bake for 1 hr 30 mins or until lamb is tender. Serve.
