Ingredients

1/2 cup plus 2 tbsp . fresh-squeezed lemon juice
3/4 cup fresh-squeezed orange juice
1 bottle excellent-quality pinot noir wine
2 1/2 cups water
1 1/4 cups superfine sugar
2 tablespoons unsalted butter , room temperature
1/2 cup granulated sugar
3 egg whites
1/2 teaspoon vanilla extract
3/4 cup flour
2 teaspoons fresh ground black pepper
3 1/2 pints fresh raspberries
5 sprigs of fresh mint ( to garnish ) ( optional )

Instructions
