Ingredients

40 g cornflour
35 g unsalted butter
350 ml milk
1 egg
1 vanilla bean
65 g white sugar
120 g icing sugar
1 drop food coloring
2 teaspoons water
The Vanilla Custard Choux Eclair is a classic French pastry. Instructions

1.Preheat oven to 200°C
2.Sift the cornflour and set it aside.
3.Add milk and butter to a saucepan and bring to the boil. Remove from heat once butter has melted completely. Scrape the seeds from the vanilla pod and add them to the saucepan, then stir in the cornflour until properly combined.
4.Whisk in the egg and sugar, stirring continuously, then return to the heat for 3 minutes. Ensure to whisk the mixture until it thickens.
5.Transfer the custard mixture to a piping bag and pipe it into the eclairs until they are full.
6.Mix the icing sugar with a drop of food coloring and two teaspoons of water to form the icing. Mix it until it is free of any lumps.
7.Dip or spread the top of the eclairs with the icing after they have cooled.
8.Serve and enjoy!
