French Almond Merangues are a classic French dessert that originated in the town of Montelimar in the Rhone Valley region. These sweet and crunchy treats are made from whipped egg whites, sugar, almond extract, and ground almonds, and are often served as a light and refreshing end to a meal. They are easy to make and can be flavored with a variety of extracts and spices to suit your tastes. Whether served as a snack or a dessert, these delicate and delicious treats are sure to delight.

Instructions

1.Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper.
2.In a small saucepan, heat the sugar and water over medium heat, stirring occasionally until the sugar dissolves. Increase the heat to high and bring the mixture to a boil without stirring. Cook until the mixture reaches 245 degrees F (118 degrees C) on a candy thermometer.
3.In a separate bowl, beat the egg whites until stiff peaks form. Gradually pour the hot syrup into the egg whites, beating continuously until the mixture is glossy and stiff.
4.Fold in the almond extract, vanilla extract, and ground almonds until well combined. Transfer the mixture to a pastry bag fitted with a large star tip.
5.Pipe the mixture onto the prepared baking sheet, forming small mounds about 1 inch in diameter, leaving space between them to prevent sticking.
6.Bake for 1 1/2 to 2 hours, or until the meringues are dry and crisp. Let cool completely before serving.
