Ingredients

200 g whole wheat flour ( I used whole spelt flour )
1/4 teaspoon dried rosemary
1/4 teaspoon rubbed sage
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper
100 g parmesan cheese , grated
50 g tahini
50 ml water
1 egg , beaten
2 tablespoons demerara sugar
1 tablespoon oil ( I used a garlic-infused one )
2 tablespoons balsamic vinegar
3 small apples , washed , cored and quartered
1 large onion , chopped

Instructions

1.Preheat the oven to 200°C/400°F.
2.In a large bowl, mix together flour, rosemary, sage, thyme, garlic powder, black pepper, cayenne pepper, grated parmesan cheese, tahini and water.
3.Stir in egg to form a dough, knead well and then chill in the fridge for 5 minutes.
4.On a floured surface, roll out the dough and then place it in a 20 cm/8 inch tart tin.
5.In a frying pan, heat oil over medium heat and add chopped onion. Fry until the onion has softened and then add balsamic vinegar and sugar. Cook until the mixture is caramelized.
6.Arrange quartered apples on top of the onion mixture and then place the tart tin in the oven.
7.Bake for 25-30 minutes or until the tart is golden brown.
8.Remove from oven and let it cool for a few minutes before serving.
