Instructions

1.Preheat the oven to 350°F and brush a 9-by-13-inch baking pan with melted butter.

9.Cut the cake into three equal pieces and place one of them on the prepared parchment-lined baking sheet.
10.Brush the cake layer with some of the raspberry mixture and then place another layer of cake on top of it, brushing it with more raspberry mixture.
11.Spread the remaining raspberry mixture over the top of the cake and let it cool completely.
12.In a large saucepan, combine the sugar, corn syrup, almond extract, and 1 cup of water and stir until the sugar is completely moistened.
13.Cook the mixture over high heat, without stirring, until it reaches 240°F on a candy thermometer, about 10 minutes.
14.In a large bowl, combine the confectioners’ sugar with 3 cups of the hot sugar syrup and the almond extract and beat with an electric mixer until smooth.
15.Frost the top of the cake with the almond icing and let it sit for a few hours before cutting the cake into 1-inch squares to serve.
