100 g bacon ( lean bacon )

400 ml wine ( red , dry )
150 g mushrooms ( white button mushroom )

1 bay leaf
1/4 teaspoon thyme ( dried )
1 tablespoon fresh parsley leaves
1/4 teaspoon rosemary ( fresh )
1/4 teaspoon clove ( or two cloves )
2 garlic cloves

Instructions

1.Season the chicken with salt and pepper.
2.Cook the bacon in a large dutch oven over medium heat until crisp. Remove bacon from pan.
3.Add butter and olive oil to the same pan. Brown the chicken on all sides.
4.Remove the chicken from pan. Add onions and saute for about 5 minutes or until lightly brown.
5.Add cognac and the wine to deglaze the pan. Return chicken and bacon to the pan.
6.Add the mushrooms, 25g of butter, flour, bay leaf, thyme, parsley, rosemary, cloves, and garlic to the pan.
7.Bring to a boil, then reduce heat to low, cover and simmer for 45 minutes or until chicken is cooked.
8.Serve hot and enjoy!
