Ingredients

2 lbs boneless skinless chicken breasts
salt and pepper , to taste
1 cup chopped onion , divided
2 tablespoons butter
2 garlic cloves , minced , divided
1 lb mushroom , chopped small
1/2 cup parmesan cheese
1/2 teaspoon ground thyme
1/4 cup breadcrumbs ( as needed )
2 tablespoons olive oil
1/2 cup white wine
1 cup unsalted chicken stock
1/4 cup heavy cream
1/4 cup chopped parsley

Instructions

1.Preheat the oven to 375°F.

8.Add olive oil and remaining onions to skillet and cook until softened.
9.Add remaining garlic and cook until fragrant.
10.Add white wine and let it simmer for 2 minutes.
11.Add chicken stock and heavy cream, and bring to simmer. Reduce 1/4.
12.Place chicken breasts on skillet bottom-side down and bake until browned and cooked through, about 25-30 minutes.
13.Garnish with chopped parsley and serve hot.
