Ingredients

20 ounces white wine
1 wildberry flavored tea bag
2 vanilla beans ( whole )
4 mint leaves
3/4 cup raspberries
3/4 cup cherries ( pitted )
3/4 cup blueberries
3/4 cup strawberry
Wildberry Summer Soup is a chilled soup made with fresh berries, white wine and vanilla beans. The soup is ideal for a hot summer day when you need a refreshing, healthy and light meal. Instructions

1.In a large pot, add the white wine and bring it to a boil over medium heat.
2.Once it starts boiling, remove from heat and add the wildberry tea bag, vanilla beans, and mint leaves.
3.Let it steep for 5 minutes before removing the tea bag and vanilla beans.
4.Add the raspberries, cherries, blueberries, and strawberries to the pot and place it back on medium heat.
5.Cook for 5-7 minutes or until the fruit is tender.
6.Remove from heat and let it cool.
7.Pour the mixture into a blender and blend until smooth.
8.Strain through a fine-mesh sieve to remove any solids.
9.Chill the soup in the refrigerator for at least 1 hour before serving.
