2 red onions , thinly sliced
2 teaspoons brown sugar
1 tablespoon balsamic vinegar
1 tablespoon dried thyme
1/4 teaspoon garlic granules
2 sheets ready rolled phyllo pastry
12 ounces goat cheese

Instructions

1.Preheat oven to 350°F (180°C).
2.Melt the butter in a large pan over low heat.

6.Layer the phyllo squares into the muffin tin, folding the edges to create a small crust in each one.
7.Crumble the goat cheese evenly over the phyllo cases.
8.Spoon the caramelized onions over the goat cheese.
9.Bake in the preheated oven for 15-20 minutes, until the tarts are golden brown and crispy.
10.Remove from oven and allow to cool slightly before serving.
