Ingredients

1 large chicken
1 large onion , cut into rings
2 teaspoons garlic , minced
1 tablespoon parsley , fresh
4 green onions , chopped

2 bay leaves

3/4 cup white wine
1/4 cup butter
6 portobello mushrooms , cut in pieces ( optional )
chicken broth
3 egg yolks
1 cup cream ( light or regular , your call )
tarragon , and , chervil ( optional )

Instructions

1.Heat the butter in a pan and sauté the chicken until brown.
2.Add the onions, green onions, garlic, parsley, thyme, bay leaves, nutmeg, and pepper. Sauté for a few minutes until the onions are soft and translucent.
3.Pour in the white wine and stir to coat everything well.
4.Add the mushrooms and enough chicken broth to almost cover everything in the pan.
5.Bring to a boil and then reduce heat, cover and simmer for 50 minutes or until the chicken is thoroughly cooked.
6.In a bowl, beat together the egg yolks and cream.
7.Take the chicken off the heat and remove the bay leaves.
8.Slowly mix in the egg yolk and cream mixture, stirring constantly until well combined and heated through.
9.Add in the chopped chervil and tarragon (optional). Serve immediately.
