1/2 teaspoon dried thyme

1 can diced tomatoes , undrained
1 bay leaf
1/4 cup dry breadcrumbs
1/4 cup fresh parmesan cheese , grated
2 tablespoons butter , melted
1 lb Italian sausage , chopped
2 tablespoons fresh parsley
This Slow Cooker White Bean Cassoulet is a warming and satisfying dish that is perfect for cold winter days. Instructions

1.In a skillet, heat oil over medium heat.
2.Add onions, carrots, parsnips, and garlic and cook, stirring occasionally, until softened.
3.Transfer vegetables to a slow cooker and stir in the white beans, vegetable broth, dried thyme, salt, black pepper, tomatoes, and bay leaf.
4.In a small bowl, mix together bread crumbs, Parmesan cheese, and melted butter.
5.Pour mixture over the bean mixture.
6.Sprinkle the sausage over the top.
7.Cover and cook on low for 6-8 hours or on high for 3-4 hours.
8.Sprinkle with parsley before serving.
