1 1/2 large onions , coarsely chopped
3 large garlic cloves , split , germ removed , coarsely chopped

1/3 cup dry white wine
2 sprigs parsley
1 sprig rosemary
6 cups chicken broth
6 large white mushrooms , wiped clean and trimmed
2 scallions , white and light green parts only , thinly sliced
2 tablespoons minced fresh parsley
1 tablespoon minced fresh chives

creme fraiche ( optional )

Instructions

1.In a large pot, melt the unsalted butter over medium heat until it begins to foam.
2.Add the chopped onions and garlic to the pot. Season with salt and fresh ground white pepper. Cook for 5-7 minutes, until the onions are soft and translucent.
3.Add the sliced white mushrooms and cook for an additional 5-7 minutes. Then pour in the dry white wine, parsley and rosemary sprigs, and chicken broth. Bring to a boil and then reduce heat to low and simmer for 20-25 minutes.
4.Discard the parsley and rosemary sprigs and transfer the soup to a blender. Puree until smooth.
5.Return the soup to the pot and slowly reheat. Season with salt and fresh ground white pepper to taste.
6.Slice the trimmed white mushrooms thinly and mix them with sliced scallions, minced fresh parsley, and chives. Garnish soup with this mixture. Optionally, top with a dollop of creme fraiche.
