1 egg yolk
3 1/2 cups flour , unsifted
1 egg white
1 tablespoon sugar

Instructions

1.In a saucepan, heat milk and butter until butter melts.
2.In a mixing bowl, combine sugar, salt, warm water, and yeast. Wait for the yeast to dissolve.
3.Add eggs and egg yolk, beat until combined.
4.Add the flour and beat again until the dough is smooth.
5.On a floured surface, knead the dough until it becomes elastic.
6.Grease a bowl with oil and transfer the dough to the bowl. Cover with plastic wrap and leave to rise for 2 hours.
7.Preheat the oven to 375°F. Grease the muffin tins and set aside.
8.Place the dough on a floured surface and sprinkle it with sugar. Cut into small pieces and form them into balls. Place them into the muffin cups.
9.Brush the tops of the brioche with egg white. Sprinkle sugar on top.
10.Bake for 15 to 20 minutes.
