375 g puff pastry
icing sugar , to serve
1 vanilla pod
284 ml double cream
40 g icing sugar , sifted
100 g dark chocolate , broken
75 g butter , cubed
3 medium eggs , separated
75 g caster sugar
Millefeuille, also known as napoleon pastry, is a classic French dessert that consists of layers of puff pastry and pastry cream. This recipe takes it to the next level by adding a layer of decadent chocolate mousse to the mix. Instructions

1.Preheat the oven to 180°C/gas mark 4. Roll the puff pastry out to a 3mm thickness and cut out five large rectangles. Place on a baking sheet lined with parchment paper.
2.Bake for 20-25 minutes, or until golden brown. Remove from the oven and allow to cool on wire rack.
3.Meanwhile, scrape the seeds from the vanilla pod and place in a large mixing bowl. Add the double cream and icing sugar, and whisk until soft peaks form.
4.Melt the chocolate and butter in a heatproof bowl set over a pan of simmering water. Stir occasionally until smooth, then remove from the heat and leave to cool for 10 minutes.
5.In a separate bowl, whisk the egg yolks and caster sugar together until thick and pale. Fold in the cooled chocolate mixture.
6.In a clean bowl, whisk the egg whites until stiff peaks form. Gently fold into the chocolate mixture.
7.To assemble the Millefeuille, place one rectangle of puff pastry on a serving plate. Spread a layer of the vanilla cream on top of the pastry, then add a layer of the chocolate mousse. Repeat with the remaining pastry, cream, and mousse, finishing with a layer of puff pastry on top.
8.Dust the Millefeuille with icing sugar and serve.
