1 red jalapeno chile , stemmed
1 green jalapeno , stemmed
kosher salt
2 large egg yolks
1 cup clarified butter , warm

Instructions

1.In a small saucepan, heat the orange juice, canola oil, and both jalapenos over medium heat until the liquid has reduced by two-thirds.
2.Remove the jalapenos, season with salt, and set aside.
3.In a mixing bowl, whisk together egg yolks and a pinch of salt until frothy.
4.Set bowl over a hot water bath and whisk until egg yolks have thickened to a ribbon-like consistency.
5.Gradually whisk in the warm clarified butter, making sure each addition is fully incorporated before adding more.
6.Once all the butter has been incorporated, remove from heat and fold in chopped cilantro.
7.Season to taste with salt and additional orange juice if desired.
