6 cooking apples ( about 1 kilo )
150 g butter
150 g white sugar
1/2 - 2 teaspoon cinnamon ( to suit your taste )

150 g self raising flour
150 g plain flour
7 teaspoons water
1 teaspoon vanilla
150 g butter , room temp
3 tablespoons sugar

Instructions

1.Preheat the oven at 180°C.
2.Peel and slice the apples into thin crescents.
3.In a non-stick frying pan, cook the butter, sugar and cinnamon, stirring gently.
4.Add the sliced apples to the frying pan and reduce the heat to low. Cook for about 10 minutes, or until the apples become tender. Remove from heat and let it cool.
5.In a large mixing bowl, beat the room-temperature butter and sugar until creamy.
6.Add the vanilla and eggs to the mixture, and continue to beat until well combined.
7.In a separate bowl, sift the self-raising flour and plain flour together.
8.Gradually add in the flour mixture, alternating with water, whisking on low speed until the batter is smooth.
9.In a greased 20 cm cake pan, spread the apples evenly at the bottom. Cover the apples with the cake batter, making sure the batter is smooth.
10.Bake the cake for 35-40 minutes, or until the cake is golden brown and an inserted toothpick comes out clean.
11.Once baked, let the cake cool in the pan for 15-20 minutes.
12.After cooling, invert the cake onto a plate, tapping the pan to release the cake.
13.Serve warm with cream or ice-cream.
