Monica's Cherry Clafouti is a classic French dessert that originated in the Limousin region of France. Traditionally, this dessert is made with unpitted cherries, as the pits are said to impart a nutty flavor to the dish. However, this recipe uses pitted cherries for convenience. The dessert is made with a simple batter that is poured over the cherries and baked in the oven until golden brown. The texture of this dessert is somewhere between a flan and a custard, making it a unique and delightful treat to enjoy.

Instructions

1.Preheat the oven to 375°F (190°C).
2.Combine flour, sugar, and salt in a bowl and whisk to mix.
3.In another bowl, whisk eggs, milk, and vanilla extract until smooth.
4.Add the dry ingredients to the egg mixture and mix well.
5.Place cherries in an 8-inch baking dish and pour the batter over the top.
6.Bake until the clafouti is puffed and golden brown, about 35-40 minutes.
7.Remove from oven and let it cool for 5 minutes before serving.
