Ingredients

1 cup milk
2 cups heavy cream
7 egg yolks
2 tablespoons sugar
8 ounces white chocolate , chopped into smal pieces
1 teaspoon vanilla extract
1 package frozen raspberries in light syrup or 10 ounces reduced-sugar raspberry preserves
2 teaspoons corn syrup
1 tablespoon lemon juice
1 tablespoon cornstarch , mixed to a paste with
1 tablespoon water

Instructions

1.In a medium saucepan, heat milk and heavy cream over medium heat until you see steam.
2.Add white chocolate and sugar. Cook and stir until chocolate is melted.
3.In a mixing bowl, whisk egg yolks.
4.Slowly whisk in half of the hot milk mixture into yolks until blended. Return back into the saucepan.
5.Cook over low heat stirring constantly, until mixture thickens and coats back of spoon (around 10-12 minutes). Transfer in a bowl to cool. Stir in vanilla. Cover and refrigerate at least two hours or overnight.
6.In a blender or food processor, puree raspberries until smooth.
7.Pour in a small saucepan, lemon juice and corn syrup. Heat over low heat till hot, but not boiling. Slowly whisk in cornstarch paste and cook and stir until bubbly and thickened. Cool.
8.Freeze ice cream in an ice cream maker following manufacturer's directions. When finished, layer ice cream and raspberry mixture in the loaf pan until all has been used. Freeze until firm.
9.When ready to serve, let stand at room temperature for about 10 minutes before cutting into slices and serving.
