Ingredients

3 tablespoons olive oil
1 large red onions or 1 large white onion , quartered and thinly sliced crosswise
1 bunch chard leaves , leaves only , chopped
salt & freshly ground black pepper
1 garlic clove
6 -8 eggs , lightly beaten
2 tablespoons chopped parsley
2 tablespoons chopped basil
2 teaspoons chopped thyme
1 cup grated gruyere
2 tablespoons freshly grated parmesan cheese
Chard and Onion Omelet (Trouchia) is a traditional dish originating from the South of France. Instructions

1.Heat 2 tablespoons of olive oil over medium heat in a large frying pan.

4.Add eggs, chopped parsley, chopped basil, chopped thyme, and a cup of grated gruyere.
5.Cook over low heat until set.
6.Sprinkle freshly grated parmesan cheese on top.
7.Broil until top is golden brown
8.Cut the omelet into wedges and serve hot.
