Ingredients

3/4 cup granulated sugar , plus extra for coating dish
6 eggs , separated
1/2 teaspoon cream of tartar
1/2 teaspoon salt
4 medium tangerines
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 tablespoon confectioners ' sugar

Instructions

1.Preheat oven to 375°F.
2.Grease the ramekins with some butter and dust them with sugar.
3.Separate egg whites and egg yolks. Beat egg yolks with 3/4 cup of sugar until light and fluffy.
4.Grate the zest of 2 tangerines and squeeze the juice of all the tangerines. Mix into the egg yolk mixture.
5.Sift the flour and salt into the mixture. Mix well
6.Beat the egg whites until soft peaks form. Add cream of tartar in between and then continue to beat.
7.Fold the egg whites gently into yolk mixture.
8.Pour the mixture into ramekins and bake for 15-17 minutes.
9.Remove from oven and dust with confectioner’s sugar. Serve immediately.
