1 lb bramley cooking apple
1/2 lemon , juice of
8 ounces butter , softened
10 ounces golden caster sugar
4 eggs
2 teaspoons vanilla extract
12 ounces self raising flour
2 teaspoons baking powder
2 tablespoons demerara sugar
Traditional English Apple Traybake - Apple Pudding Cake is a classic British dessert that has been loved for generations. Instructions

1.Preheat the oven to 180°C (160°C fan)/350°F/gas 4. Grease and line with baking parchment a shallow rectangular baking tin (about 30 x 23cm).
2.Peel, core and slice the apples. Put them into a saucepan with 2-3 tbsp of water, the lemon juice and cook gently until just tender. Set aside to cool.
3.Cream the butter with the golden caster sugar in a mixing bowl until pale and fluffy.
4.Gradually beat in the eggs, one by one, adding a spoonful of the self-raising flour with the last egg to prevent the mixture from curdling.
5.Fold in the vanilla extract, sifted self-raising flour and baking powder to make a smooth batter.
6.Spoon half the batter into the prepared tin and spread it out evenly. Arrange the cooled apple slices over the top, then spoon the remaining batter on top and spread level.
7.Sprinkle the demerara sugar evenly over the surface and bake for 35-40 minutes or until the cake is golden brown, firm to the touch in the centre, and has just shrunk away from the tin edges.
8.Leave to cool for a few minutes in the tin, then turn out onto a wire rack. Remove baking parchment and leave to cool completely. Cut the cake into squares and serve warm or cold, dusted with icing sugar or with cream or custard, if wished.
