Instructions

1.In a small bowl, mix together flour, raw sugar, salt, and black pepper. Drizzle in olive oil, courvoisier, and enough water to make a pliable dough.
2.Knead the dough until smooth, wrap in cling film, and refrigerate for 1 hour.
3.In a separate bowl, soak raisins in 3 tablespoons of courvoisier for 30 minutes.
4.Preheat the oven to 200°C (392°F).
5.In another bowl, mix together tomatoes, salt, black pepper, olive oil, sugar, thyme, rosemary, and lemon zest. Bake in preheated oven for around 15 minutes, or until the tomatoes have slightly caramelized.
6.Roll out the dough thinly on a surface dusted with cornstarch. Cut circles using a cookie cutter. Prick all over with a fork. Arrange on a lined baking tray.
7.Toast the ground almonds and breadcrumbs together until golden brown. Mix with green onions and some courvoisier-soaked raisins. Spread the mixture on the pastry rounds. Arrange the caramelized tomatoes on top.
8.Bake in the oven for around 10-12 minutes until the edges are golden brown. Garnish with green onions.
