4 -5 endive , ends trimmed , halved lengthways
3 ounces soft fresh goat cheese , crumbled , plus extra to serve
Caramelized Endive and Onion Tarte Tatin is a savory variation of the classic French dessert. It features flaky puff pastry filled with caramelized onions, bitter endive, and tangy goat cheese. Instructions

1.Preheat oven to 375°F.
2.On a lightly floured surface, roll puff pastry out to a 10-inch circle and transfer to a baking sheet lined with parchment paper. Refrigerate until needed.
3.Melt the butter in a large nonstick skillet over medium-high heat. Add the onion, sugar, and thyme and cook, stirring occasionally, for 10–15 minutes or until the onions are caramelized and golden brown.
4.Add the endive halves, cut-side down, to the skillet and cook for a further 2–3 minutes or until beginning to brown.
5.Arrange the caramelized onions and endive cut-side up in the pastry circle, leaving a 1-inch border around the edges.
6.Scatter the goat cheese over the top of the vegetables, and then fold the edges of the pastry up and over the filling to form a rustic edge.
7.Bake for 25–30 minutes or until the pastry is golden brown and crisp.
8.Leave to cool slightly before slicing and serving.
