Ingredients

1 yellow courgette , sliced
1 green courgette , sliced
100 g cherry tomatoes , halved
2 garlic cloves , crushed
25 g butter ( optional )
2 eggs , beaten
3 tablespoons creme fraiche or 3 tablespoons sour cream
100 ml 1 % low-fat milk
25 g self raising flour
50 -75 g grated parmesan cheese
salt
fresh ground black pepper
Mixed Courgette and Cherry Tomato Clafouti With Cheese is a French-inspired savoury dish that is perfect for a light lunch or dinner. Clafouti is traditionally sweet and made with cherries, but this savoury version combines courgettes, cherry tomatoes, and cheesy goodness. It's a crowd-pleaser that is both filling and easy to make.

Instructions

1.Preheat oven to 200C / 180C fan / Gas 6.
2.Heat the butter in a medium frying pan, add the courgettes and garlic, season, fry gently until tender for about 5 minutes.
3.Meanwhile, mix the eggs, creme fraiche or sour cream, milk and flour in a large bowl. Season and whisk until smooth.
4.Add the cooked courgettes to a 20cm / 8 inch baking dish, followed by the cherry tomatoes.
5.Pour the egg mixture over the courgettes and tomatoes and sprinkle the parmesan cheese on top.
6.Bake for 20-25 minutes or until golden brown and puffed up.
