1/3 cup colavita olive oil
2/3 cup brown sugar
2 granny smith apples , peeled , cored and sliced
1 ripe pear , peeled , cored and sliced
1/2 cup dried cherries or 1/2 cup cranberries
1/2 teaspoon ground cinnamon
4 eggs , beaten
1 cup milk , more if necessary
1/2 teaspoon almond extract
2 tablespoons Amaretto
chopped fine toasted almond
