Ingredients

2 cans chickpeas , drained , liquid reserved , and rinsed
4 whole cloves
1 small onion , peeled but left whole
1 cup cubed carrot
2 garlic cloves , minced
2 sprigs fresh parsley
2 tablespoons olive oil

6 plum tomatoes or 3 medium tomatoes , chopped
2 cups tomato sauce , mediterranean ( purchased or homemade )
1 tablespoon lemon juice
1 teaspoon sugar ( to taste )
1 teaspoon dried basil
1 teaspoon dried thyme
salt & freshly ground black pepper , to taste
2 tablespoons olive oil
2 cups dry breadcrumbs
1/2 cup fresh parsley , chopped
This garbanzo cassoulet is a vegetarian twist on a classic French dish. Instructions

1.Preheat the oven to 350°F.
2.Using a cheesecloth, make a sachet of the cloves, onion, carrot, garlic, and parsley. Tie it up with a string and set aside.

4.Add the finely minced garlic and cook for another minute.

8.In a separate pan, heat the remaining 2 tablespoons of olive oil over medium and add the breadcrumbs. Cook, stirring frequently, until golden brown.
9.Sprinkle the breadcrumbs over the cassoulet and bake in the preheated oven for 20-25 minutes, or until hot and bubbly.
