Ingredients

1 1/2 cups buckwheat groats or 1 1/2 cups barley
3 cups vegetable stock ( possibly more )
1 cabbage
1 onion , chopped
2 tablespoons oil
1 red chili peppers , finely chopped or 1 jalapeno
1 teaspoon cayenne
1/2 teaspoon clove
1 teaspoon cinnamon
1 1/2 cups pineau des charentes
salt
pepper
Cabbage Braised in Pineau Des Charentes is a classic French dish that is often served at family dinners or special occasions. The slight bitterness of the cabbage is complemented by the sweet and tangy flavor of the Pineau des Charentes, a fortified wine produced in western France. The addition of spices and buckwheat or barley makes this dish a healthy and satisfying option for a hearty meal.

Instructions

1.Preheat oven to 325°F (165°C).
2.Cook buckwheat or barley according to package directions with vegetable stock.
3.Cut cabbage into quarters and remove the tough core.
4.In a large skillet, sauté onion in oil until translucent.
5.Add chili peppers, cayenne, clove, cinnamon, and salt and pepper to taste and sauté for another 2 minutes.
6.Pour pineau des charentes over sautéed onion mixture and cook for 1 minute.
7.Add cooked buckwheat or barley to the skillet and mix with the onion mixture.
8.Place cabbage slices on top of the mixture and spoon some of the onion mixture over the cabbage.
9.Cover skillet with a lid or foil and transfer to the preheated oven.
10.Bake for 40-50 minutes until the cabbage is tender.
