Ingredients

4 large flat mushrooms
1 tablespoon butter
3 tablespoons marmite
4 crumpets
4 eggs
1 tablespoon white vinegar
175 g butter
2 egg yolks
1 lemon , juice of
1/2 teaspoon cayenne pepper
1/2 teaspoon salt

Instructions

1.Clean the mushrooms by wiping them with a damp cloth and remove the stalks.
2.Melt the butter in a pan and add the marmite and mushroom caps. Cook on medium heat for 5 minutes, turning the mushrooms occasionally.
3.Toast the crumpets and place them on plates.
4.In a separate pan, heat water and vinegar. When the water is simmering, crack the eggs into the pan and cook for 3 minutes for a perfectly poached egg. Remove with a slotted spoon and place the eggs on top of the crumpets.
5.For the Hollandaise, melt the butter in a separate saucepan.
6.In a heatproof bowl, whisk together the egg yolks, lemon juice, cayenne pepper and salt.
7.Place the bowl over a saucepan with simmering water and whisk continuously until the mixture has thickened.
8.Remove from the heat and slowly whisk in the melted butter until the mixture is smooth and creamy.
9.Drizzle the Hollandaise over the poached eggs and serve hot.
