Confiture De Crameillotte is a French jelly that originates from the Burgundy region. It's made with the yellow petals of dandelion flowers, which are abundant in the spring when they bloom in meadows and fields. This jelly has been a popular delicacy in the French countryside for generations, and it's now gaining popularity worldwide as a unique and flavorful preserve. The process of making the jelly is straightforward and doesn't require any special skills or equipment, making it a great activity to do with family and friends. The jelly can be enjoyed on toast, croissants, or scones, or used as a glaze for meats and vegetables.

Instructions

1.Rinse the dandelion flowers and remove all the yellow parts, making sure no stems or greens remain. Do this quickly to reduce the amount of bitter flavor.
2.Put the yellow petals in a pot with the water, lemon slices, and vanilla bean; bring to a boil and let it boil for 10 minutes.
3.Remove the pot from the heat, cover it with a lid, and leave it rest for at least 12 hours or overnight.
4.Strain the mixture through a fine-mesh sieve or cheesecloth to remove all the flowers, lemons, and vanilla beans.
5.Measure the liquid and place it back in the pot. For each liter of liquid, add 1 kg of sugar.
6.Put the pot over medium-high heat for about 1 hour, stirring occasionally.
7.Test the jelly by putting a spoonful on a cold plate. If it wrinkles when pushed with a finger, then it's ready. If not, boil a little longer and test again.
