1 cup unbleached flour ( regular wheat or maybe a gluten free blend )
1 cup chickpea flour
extra oil ( for frying )

Instructions

1.Combine warm water, rosemary, olive oil, sea salt, and black pepper in a bowl and whisk together.
2.Combine the chickpea flour and unbleached flour in a large mixing bowl.
3.Slowly add the water mixture to the flour mixture and whisk until combined.
4.Cover the bowl with a lid or plastic wrap and set aside for 30-60 minutes.
5.Preheat a large skillet or griddle over medium-high heat and add a generous amount of oil.
6.Pour about 1/2 cup of the batter into the skillet, spreading it evenly with a spatula.
7.Cook for 3-5 minutes, until the edges start to brown and the surface looks dry.
8.Using a spatula, flip the socca over and cook for another 2-3 minutes.
9.Remove the socca from the skillet and repeat with the remaining batter.
