Ingredients

1 pie crusts or 3/4 lb tart pie dough
2 1/4 lbs leeks , split lengthwise , washed very well and cut into 1/4-inch pieces
4 1/2 tablespoons butter
salt & freshly ground black pepper
1/3 cup heavy cream
5 medium egg yolks
1 tablespoon Madras curry powder ( optional )
French Leek Flamiche - Quiche is a traditional French dish that originated in the Picardy region of France. Its main ingredient is leeks, which grow abundantly in the region's rich soil. Instructions

1.Preheat oven to 400°F and roll out pie crust to fit a 9-inch tart pan. Transfer dough to pan, trim edges and chill.
2.Melt butter in a large skillet over medium heat. Cook leeks until soft and golden, stirring occasionally, for about 25 minutes. Season with salt and pepper.
3.In a small bowl, whisk together cream, egg yolks, and curry powder, if desired.
4.Spread leek mixture in chilled crust. Pour egg mixture on top and bake for 35-40 minutes until set and lightly golden on top.
5.Let cool and serve.
