Ingredients

2 large eggplants
2 cans plum tomatoes ( drained , squeezed of excess liquid and coarsely chopped )
1 package mushrooms ( sliced )
4 tablespoons capers ( drained and rinsed )
2 packages goat cheese ( Montrachet )
4 garlic cloves ( minced )
4 tablespoons fresh oregano
2 tablespoons fresh basil
2 tablespoons fresh thyme
salt & pepper
olive oil
Eggplant (Aubergine) Tart is a classic French dish that is enjoyed all over the world. Instructions

1.Preheat the oven to 400°F (200°C).
2.Slice the eggplants lengthwise into 1/4-inch thick slices. Then lightly salt the eggplant slices and set them in a colander to drain for 30-40 minutes.
3.Rinse the eggplant slices and pat them dry. Then brush each slice with olive oil on both sides.
4.Place the eggplant slices on a baking sheet and roast them for 20-25 minutes, flipping them over halfway through cooking.
5.While the eggplant is roasting, heat a frying pan over medium heat and add a tablespoon of olive oil. Once hot, add the sliced mushrooms and cook for 5-7 minutes until softened.
6.In a mixing bowl, combine the canned tomatoes, minced garlic, capers, oregano, basil, and thyme. Season the mixture with salt and pepper to taste.
7.Once the eggplant is done roasting, reduce the oven temperature to 375°F (190°C). In a 9-inch baking pan, layer the roasted eggplant slices on the bottom, then spoon half the tomato mixture over the top. Dot the mixture with goat cheese and top with half of the mushrooms. Add another layer of eggplant slices and repeat with the remaining tomato mixture, mushrooms, and goat cheese.
8.Bake the tart for 30-40 minutes until the edges are golden brown and bubbly.
