1 package pie crusts ( refrigerated , 2 crusts )
1/4 cup parmesan cheese , grated
1 package frozen chopped spinach , thawed and well drained
1 package cream cheese , softened
1 package feta , crumbled
1 garlic clove , pressed
1 can artichoke hearts , in water , drained and chopped
1 lemon
3 1/2 ounces ripe olives , pitted , drained and sliced
1 1/2 teaspoons italian seasoning
3 plum tomatoes , sliced

Instructions

1.Preheat your oven to 375F (190C).
2.Mix together the spinach, cream cheese, feta, garlic, artichoke hearts, juice of half a lemon, chopped olives, and italian seasoning.
3.Unroll both pie crusts and layer on a baking sheet. Spread the spinach mixture onto one pie crust. Top with sliced tomatoes and sprinkle with parmesan cheese.
4.Place the second pie crust over the top of the spinach mixture. Press down around the edges to seal, then brush the top with the remaining lemon juice.
5.Bake for 30-35 minutes, or until golden brown and cooked through. Let cool for a few minutes before slicing and serving.
